Cellarability
This describes the potential of a wine to improve as it ages. Oak-aged red and white varietals are best for cellarability.

Storage temperatures
Wines should be stored at temperatures between 55 and 58 degrees F. It is critical that storage temperatures and barometric pressures remain constant. Fluctuations will cause expansion and contraction of the liquids, pulling oxygen into the bottle and compromising the flavor.

Did You Know
When the wreckage of the Titanic was recovered in 1986, the corks of the still wine bottles had imploded under the ocean pressure, but the majority of the champagne bottles were still intact.

It is believed by some vineyards that singing to the grapes on the vine will improve their flavor.

Removing a cork requires a pull equivalent of lifting approximately 100 lbs.

Whether you're an introductory wine drinker or a wine connoisseur, you'll find our selection of House Wines excellent for everyday use. Each of these proprietary blends is light, delicate, and semi-dry. Light berry undertones combine for an airy yet delicate, soft yet crisp finish. Simple by design, our House Wines will appeal to every palate. They may be served as aperitifs or paired with food. The wines from this collection are unoaked and immediately drinkable. So you might say they're the perfect choice for the person who lives just for the day.

Childress Vineyards Varietals
The grapes from which we make our Varietals originate from the vineyard sites in North Carolina's Yadkin Valley with the most favorable terroir. Aged in French and American oak barrels, our Varietals will continue to soften with age once bottled. Each blend is created by our winemaker, who combines state-of-the-art winemaking techniques with old world methods. These wines are drinkable immediately, but will also improve in 2 to 4 years with proper cellaring. Of course, waiting that long may prove far too challenging.

Childress Vineyards Signature Wines
The wines from our Signature collection are created using only our most select grapes from vintage years. Hand-selected, each of these grapes is sorted at the peak of ripening. Shaded and sunburned grapes are sorted out. But the painstaking lengths to which we go to create our Signature wines don't stop there. Our winemaker also journeys to the Alliers Forest in central France to hand select the actual trees from which the aging barrels will be made. The wood is then seasoned for three years. Only new barrels are used for aging our Signature collection wines.

Properly cellared, these wines will continue to age until they peak, approximately 8 to 10 years after bottling. Which is reason enough to give anyone a wishful eye toward the future.
