The Wine Tool: North Carolina Wine of the Month • Wine: Childress Vineyards 2005 Cabernet Franc.
• Cost: $17.
• Review: This recommended cabernet franc, made predominantly from a grape native to Bordeaux, France, is a good example of the grape’s potential in North Carolina. This has some syrah and cabernet sauvignon mixed in, and was aged 15 months in French oak, making it more substantial than some other cabernet francs. The aroma floats hints of black currants, spice and a slight earthiness. Those flavors continue on the palate, along with that of ripe cherries. This medium- to full-bodied wine has a smooth integration of firm tannins, acidity, and moderate alcohol. Serve with roasted or grilled red meats and stews.
